Please don't use the list "announce" to ask questions.
This list is dedicated to important announcements such as new releases.

I could tell you to ask your question to dev at dpdk.org, but I think you should 
better read the documentation before.
Quick answer: 1 NIC is sufficient to do networking experiments. 2 NICs are 
convenient for loop testing.
